Želatina kao lijek – kako goveđa želatina može nadomjestiti kolagen

Želatina zapravo predstavlja naziv za kuhani kolagen, protein koji se nalazi u većini tkiva u našem tijelu te ga s godinama nažalost gubimo. Kolagen je iznimno važan za izgled naše kože, kose i noktiju te je najvažniji protein u našim vezivnim tkivima, kostima i zglobovima. Nadomjestiti ga najlakše možemo upravo kroz prehranu, a želatina nam u tome pomaže jer osiguravamo svome organizmu protuupalna i anti-age svojstvakoja ona nudi. Kolagen je toliko važan u našem tijelu da njegov manjak uzrokuje razne probleme, od starenja kože pa čak do osteoporoze. U nastavku čitajte kako goveđa želatina pomaže cjelokupnom zdravlju i zašto bismo je trebali uključiti u prehranu.

Kako bih vam pobliže objasnila znanstveni aspekt, ukratko ću razjasniti koju ulogu kolagen ima u tijelu. Našukožu, kosu i nokte tvore uglavnom proteini te je iznimno važno da kroz svakodnevnu prehranu unesemo dovoljno aminokiselina u svoj organizam. Najkraće rečeno – aminokiseline tvore proteine, a želatina nam osigurava velik broj jedinstvenih aminokiselina zbog kojih i posjeduje tako odlične dobrobiti po naše zdravlje. Neke od aminokiselina koje se nalaze u želatini su glicin, prolin, glutamin, alanin, arginin te lizin.

Kolagen je upravo jedan takav protein koji tvori većinu tkiva i također je najzastupljeniji protein u našem organizmu. On pomaže držati sva vezivna tkiva na mjestu, što najlakše možemo primjetiti na koži lica koja stari u korak sa smanjenjem razine kolagena u našem tijelu. Naša kosa i nokti također pate, postaju krhki i lomljivi te gube na kvaliteti. Važnost koju kolagen predstavlja za naš organizam tek je nedavno dobila na pozornosti, no proći će još nekoliko godina dok njegova uloga ne bude poznata glavnini populacije.

Na sreću, kolagen ne gubimo nepovratno već ga na jednostavne načine možemo nadomjestiti putem dodataka prehrani (želatina ili hidrolizirani kolagen u prahu, napitci i ampule s kolagenom i sl.) te ako u prehranu uvedemo namirnice s većim sadržajem aminokiselina o čemu će više riječi biti kasnije. Jedna od velikih zabuna danas jest promocija kozmetike s kolagenom. Bilo da se radi o kremama ili serumima za lice, kolagen se na taj način ne može nadomjestiti jer su njegove molekule prevelike da bi uopće mogle prodrijeti u kožu i doći do dubljih slojeva. Želatina – kolagen u prahu

Dva glavna proizvoda koji nastaju od životinjskog kolagena su želatina te hidrolizirani kolagen u prahu. S obzirom da su životinjski dijelovi koje danas većinom izbjegavamo pojesti, zapravo najveći izvor kolagena, on se prerađuje i dehidrira. Kuhani kolagen iz životinjskih dijelova koji se zatim prerađuje u prah predstavlja želatinu, a daljna obrada kolagena rezultira u hidroliziranom kolagenu čije su čestice nešto manje od želatine. Postoji nekoliko razlika u korištenju ova dva izvora kolagena koje trebate znati.

Primjerice, kvalitetna i prava želatina topiva je samo u toploj/vrućoj vodi te se koristi za zgušnjavanje kulinarskih recepata. Hidrolizirani kolagen je manji, topiv u hladnoj vodi i može se koristiti u smoothiesima i drugim jelima bez da zgusne hranu. Da ne bude zabune, želatina i hidrolizirani kolagen sadrže iste aminokiseline, samo se razlikuju u svojstvima te je želatina kod nekih ljudi lakše probavljiva.

Goveđa želatina održava zdravlje kostiju, zglobova i kože

Želatina se dobiva iz životinjskih kostiju i kože, a najkvalitetnija želatina proizvedena je od goveda koja su pasla travu i živjela na otvorenom. Danas se želatina iz prirodnijeg izvora može kupiti u mnogim trgovinama zdrave hrane i dodataka prehrani, a preporučljivo je izbjegavati kupovnu želatinu za pripremu kolača. Goveđa želatina osigurava našem organizmu vrijedne dobrobiti:

  • Poboljšava elastičnost kože,
  • Usporava starenje kože i gubitak kolagena,
  • Podržava zdravlje kostiju i zglobova,
  • Uravnotežuje omjer aminokiselina u organizmu,
  • Poboljšava probavu i zdravlje želuca,
  • Smanjuje bolove u zglobovima i kostima,
  • Poboljšava izgled i kvalitetu kose, noktiju i kože,
  • Pomaže održati jake kosti.

Želatina za zglobove – recept

Osobito je važno povećati unos kolagena kod osoba koje pate od bolova u kostima i zglobovima. Zabilježeni su pozitivni učinci želatine kod osteoartritisa i reumatoidnog artritisa, a dodatan unos želatine se preporučuje kod svih osoba koji imaju zdravstvenih problema s kostima, poput osteoporoze. Želatina i kolagen u ovome slučaju pomažu usporiti upalne procese, bolove i pogoršanje poremećaja vezanih uz kosti, ligamente i zglobove.

Goveđu želatinu tako možemo dodati u prehranu putem juhe od kostiju i drugih jela bogatih želatinom u najosnovnijem obliku. Ako pak niste ljubitelj, želatinu uzimajte u obliku praha.

Najjednostavniji recept za konzumiranje želatine kod bolova u kostima, zglobovima i ligamentima jest da pomiješate dvije ravne žlice želatine s 2,5 dcl tople vode prije spavanja i ostavite je preko noći na sobnoj temperaturi. Ujutro svoj pripravak u obliku želea možete pojesti s čime god želite (prijedlog je jogurt i voće), a kuru nastavite mjesec dana svako jutro. Nakon ove kure, napravite pauzu od minimalno mjesec dana.

Želatina za zglobove nuspojave

Goveđa želatina se generalno smatra sigurnom za korištenje i nisu zabilježene mnoge nuspojave tijekom korištenja. Najčešće je pri konzumaciji želatine problem što se ona ne koristi iz provjerenih izvora te može biti kontaminirana raznim štetnim tvarima. Također, moguće su alergije na želatinu ili hidrolizirani kolagen, no to je većinom nemoguće znati dok se ne otkrije putem alergijske reakcije. Osim toga, želatina kod nekih osoba može uzrokovati napuhanost, probavne smetnje i osjećaj težine u želucu.

Kolagen u hrani

Želatina se preporučuje ljudima svih dobnih skupina jer današnja prehrana poput bijelog mesa i mesnih obroka od mišića ne osigurava dovoljnu količinu kolagena za naš organizam. Uz želatinu, odličan izvor je i hidrolizirani kolagen u prahu te brojni dodaci prehrani koji sadrže kolagen.

Danas je sve popularniji napitak od kolagena koji prvenstveno služi za usporavanje starenja kože i gubitka kvalitete svih tkiva u organizmu. Osim napitaka, kolagen se može konzumirati i u obliku kapsula te ampula. Također, preporučljiva je konzumacija svih namirnica koje su izvor kolagena, a najbolji obrok bogat kolagenom i želatinom je dakako juha od kostiju. Osim gotovih izvora, poznato je da u našem organizmu, vitamin C uvelike pojačava stvaranje kolagena te je poželjno konzumirati citruse ili dodatke prehrani s vitaminom C (askorbinskom kiselinom).
